The inventory detail box is available only if you have detailed inventory tracking turned on for AgriStability. (Settings > Preferences > Optional Features & Inventory > Detailed Inventory Manager).
When posting sales you will typically use Gross quantity/Sales on your income line (because that's how much came out of the bin) and then you can balance the transaction by posting deductions as expenses.
